I love muffins and I love these! So simple and yummy warm. Good for a snack or with soup Ingredients:
1-1/4 cup of milk |
3/4 cup mashed potato flakes |
1 egg |
1/3 cup vegetable oil |
1 cup (4 ounces) shredded cheddar cheese |
1-2/3 cups all-purpose flour |
3 tablespoons sugar |
2 tablespoons snipped chives |
1 tablespoon dried parsley flakes |
2 teaspoons baking powder |
1 teaspoon salt |
Directions:
1. In a small saucepan, bring the milk to a boil, then remove from heat 2. stir in potato flakes. Let stand for 2 minutes and then whip with a fork until smooth 3. cool slightly. 4. Transfer to a large bowl. 5. Beat in egg, oil and cheese. 6. Combine the flour, sugar, chives, parsley, baking powder and salt in another large bowl 7. stir into potato mixture just until moistened (batter will be thick). 8. Fill greased muffin cups three-fourths full. 9. Bake at 400° for 20-25 minutes or until a toothpick comes out clean. 10. Cool for 5 minutes; remove from pan to a wire rack. |
