Mmmmmm, lovely little cheesy puffs. Ingredients:
6 tbsps. butter, cut into small pieces |
1 cup water |
1 tsp. salt |
1 cup flour |
1/4 tsp. cayenne pepper (you can always add more or not at all - it depends on your taste) |
2 tbsps. chopped chives or parsley |
5 eggs |
1 cup cheddar cheese, shredded |
fresh ground salt and pepper |
Directions:
1. Preheat oven to 450 degrees. 2. Combine butter, water and salt in a saucepan and bring to a boil, stiring often. 3. Remove from heat, then add flour, cayenne pepper and chives/parsley, stiring until the mixture is smooth. 4. Return to heat and continue to stir for about 1 minute to melt remaining lumps of butter. 5. Remove from heat and allow to cool somewhat. 6. Add eggs, one at a time, gently mixing in each egg completely before adding another egg. 7. While dough is still warm, mix in cheese, salt and pepper. 8. Spray baking sheet with non-stick spray and spoon out individual dough/cheese poofs onto baking sheet. 9. Poofs should be about 1 to 2 inches round. 10. You can also spoon mixture into muffin tins that have been sprayed with non-stick cooking spray. 11. Bake for approximately 15 – 18 minutes or until lightly golden brown in colour. |
