Cheddar Cheese Corn Muffins

These go really well with BBQ or chili.
Ingredients:
1 1/2 cup all purpose flour
1/2 cup cornmeal
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1 1/2 to 2 cups shredded cheddar cheese
1 egg, beaten
1 stick butter, melted
1 cup milk
1/4 tsp. vanilla
Directions:
1. Mix dry ingredients together in a medium bowl, then add cheese and mix
2. In a separate bowl, mix egg, butter, milk and vanilla together
3. Add this to the flour and cheese mixture and stir together
4. Spoon into greased muffin tins and bake for 15-20 minutes
