A sweet creamy cheese bread pudding accompanied by apple butter and a beer caramel sauce- a wow dessert or side for holidays or company! One can use store bought apple butter and ever add a bit of dark beer to a caramel sauce if one does not want to make their own by scratch. Read more . This is a rich a caloric recipe for special occassions. Ingredients:
1 loaf of egg, brioche or other rich soft bread |
2 cups heavy cream |
2 cups milk |
6 large eggs |
1/2 cup sugar |
1 tsp vanilla |
2 cups grated sharp cheddar cheese |
apple butter |
6 granny smith apples |
1 tbs butter |
1 1/2 tsp cinnmaon |
1/2 tsp nutmeg |
beer caramel sauce |
4 cups dark beer, any brand |
2 cups sugar |
garnish: cinnamon stick, a sliced apple and a dollop of whipped cream |
Directions:
1. Prepare your apple butter and caramel beer sauce ahead of time. 2. Pudding: 3. Cut up bread into 1/2 inch slices and let dry out at room temp about 2 hours. 4. Butter a 9 x 9 inch baking dish 5. Whisk the cream, milk, eggs, sugar and vanilla 6. Layer haf of bread in pan, cut to fit if necessary. 7. Sprinkle with the cheddar cheese. 8. Layer other half of bread 9. Slowly pour cream mixture over bread and let stand until absobed 10. Bake for 30 minutes or until top is golden 11. To serve: layer spoonfuls of bread pudding with apple butter and top with caramel beer sauce. 12. Add a dollop of whipped cream if desired and garnish with a cinnamon stick and a thin slice of apple 13. For apple butter: 14. Cook peeled and cored apples and combine with remainder of ingredients in a baking pan. 15. Cover with foil and bake 30 minutes at 375 until tender. 16. Transfer to food proceeor and puree set aside to cool 17. Beer sauce: 18. Boil beer in non reactive pan until reduced to 2 cups. 19. In a large clean skillet heat sugar over medium heat and cook without stirring until melted, swirling pan until deeply golden 20. Remove slillet from heat and carefully add beer. 21. Careful it will splatter! 22. Return to heat and cook until caramel has dissolved. 23. Transfer to bowl to cool. |
