My bread pans are 12 x 4.5 inches. I made 2 large loaves and 8 hamburger buns. I used my Kitchen Aide to mix it. Make sure all your ingredients are room temperature... or do like I did and use very warm water to heat up the frozen shredded cheddar. I used an instant read thermometer to make sure I didn't kill the yeast! This made 8 pounds of dough. Prep time does not include rise time. Please be sure to leave me constructive reviews. This is the first time I've made this recipe. I thought it was pretty good (the children ate it), but I think it could be improved. Ingredients:
4 cups water |
2/3 cup dry milk |
1/4 cup honey |
1 tablespoon salt |
1 tablespoon dry mustard |
1 tablespoon onion powder |
1/2-3/4 teaspoon cayenne pepper |
2 1/2 cups sharp cheddar cheese, grated |
12 cups whole wheat flour, fresh ground if possible |
2 1/2 tablespoons dry yeast |
Directions:
1. Measure all ingredients into the bowl, using 3 cups of the flour to begin with. Stir with dough hook until mixed. 2. Turn mixer up to speed 2 and slowly add flour until it forms a nice dough ball. You may not need all of the flour. Allow to knead for about 5 minutes. The dough will stick mostly to itself and not the sides of the bowl. 3. Turn dough out onto greased surface and knead a few times shaping it into a neat ball. Flatten slightly and cut into thirds. 4. Shape into loaves or buns. Allow to rise until doubled (20 minutes to 1 hour). 5. Bake at 350 degrees. 30 minutes for loaves. 20 minutes for buns. Remove from pans and cool on rack. Any extra may be sliced and put into the freezer. |
