One of our favorite grab and go breakfast muffins. They are yummy. Ingredients:
10 slices of bacon chopped |
1 3/4 cups of all purpose flour |
2 tbsp of sugar |
1 tbsp of baking powder |
1 tsp of salt |
1 1/2 cups of best sharp cheddar cheese |
1 egg beaten |
1 cup milk |
3 tbsp of melted butter |
Directions:
1. Cook bacon until crisp. 2. Drain well and reserve 2 tbsp of drippings. 3. In large bowl, combine flour, sugar, baking powder and salt. 4. Stir in cheese and bacon. 5. In small bowl combine egge, milk, butter and reserved bacon drippings. 6. Add to dry ingredients. 7. Stir until just moistened. 8. Divide batter between 10 medium greased muffin cups. (fill the other two cups with water to keep the pan from warping in oven. 9. Bake in 400 degree oven for 25 minutes. |
