I love the flavor of chiles rellenos but hate the effort of making them properly. Voila! a recipe with all the flavor and hardly any of the agony. Enjoy! Ingredients:
1 cup half-and-half |
2 eggs |
1/3 cup flour |
1/2 lb. grated jack or mexican white cheese |
1/2 lb. grated sharp cheddar |
1 8-oz. can tomato sauce |
2 tbs taco or enchilada seasoning |
3 4-oz. cans mild whole green chiles |
Directions:
1. Split open chiles, rinse out seeds and dry on paper towels. 2. Beat first 3 ingredients until smooth. 3. Grease a 9x9-in. pan. 4. Layer the chiles and cheese, pouring a small amount of the liquid on each layer. 5. End with cheese and pour remaining liquid evenly over the top. 6. Bake in a preheated 350° oven for 30 minutes. 7. Remove from oven; combine tomato sauce and taco seasoning and pour over top. 8. Return to oven for another 15 minutes or until a knife inserted in the center comes out clean. 9. Let stand for 5 minutes before cutting into 9 squares and serving. |
