Cheap and Easy Mexican Crepes |

This is an easy delicious dinner I invented which all my four kids love (very rare to find something they will all eat!) It's cheap to make and tastes good too. Ingredients:
1 cup all-purpose flour |
1/3 cup water |
1/3 cup milk |
1 egg |
1 tablespoon oil |
500 g beef mince |
1 (400 g) can baked beans |
mexican seasoning, mix |
1 cup tasty cheese, grated |
Directions:
1. Crepes. 2. Combine all ingredients together and beat til smooth with a whisk. Mixture should be runny. 3. Heat a greased frypan on stove. 4. Pour 2 or 3 tbsps mixture into pan and tip pan til a medium sized circle is covered with mixture. (makes a crepe about 20cm or 8inches across). 5. Filling. 6. Brown mince in saucepan. 7. Add seasoning to taste. 8. Add baked beans. 9. Assembly. 10. Place about 2 tblsps meat mixture across middle of crepe. 11. Roll up and place in lasagna dish. 12. Sprinkle with grated cheese. 13. Brown under griller. 14. Serve with salad or veges. |
