Cheap And Easy Lentil-barley Soup |

I love this. I freeze in serving size containers and bring to work for lunch. Tastes best if made a day in advance. Cheap and easy. Ingredients:
8 c. water |
3 small to medium carrots, peeled and diced (about 1 cup diced) |
1 14.5 oz can diced tomatoes, undrained |
5 chicken, beef or vegetable bouillon cubes |
1/2 tsp. garlic powder or 1 clove garlic, minced |
1 tbsp onion powder or 1 medium onion, diced |
1/2 tsp celery salt or 1 stalk celery, diced |
3/4 cup dried lentils |
3/4 cup barley (not quick-cooking) |
1/2 tsp dried rosemary |
1/2 tsp ground oregano |
1/2 tsp fresh ground pepper |
1 14 oz. can seasoned southern kale greens, undrained |
Directions:
1. Put everything except kale greens in a soup pot. 2. Bring to a boil, stirring occasionally. 3. Reduce heat to low. Cover and simmer 50 minutes. 4. Add kale greens. 5. Simmer 10 minutes longer to heat through. |
