Che Chuoi-Bananas in Coconut Milk |

This recipe is from LĂȘLĂȘ, our neighborhood Vietnamese restaurant and is taken from their recently published cookbook. Ingredients:
500 ml water |
75 g tapioca |
500 ml coconut milk |
6 bananas, not overly ripe, sliced into thin slices |
150 g sugar |
1 teaspoon salt |
1 teaspoon vanilla extract |
salted peanuts, for decoration |
Directions:
1. Cook the tapioca with the water for about 20 minutes while stirring. 2. Add the coconut milk and cook for a further 5 minutes. 3. Add the bananas, salt, sugar, and vanilla extract and cook for a further 5 minutes. Serve either warm or at room temperature with some chopped salted peanuts on top of each serving. |
