The Vegetarian Kitchen Table Cookbook Ingredients:
2 chayotes |
2 tablespoons slivered red onions |
finely chopped fresh cilantro |
1 lime, juice of |
salt |
3 tablespoons olive oil |
chopped fresh hot chili pepper |
Directions:
1. Peel chayotes and cut in half lengthwise. Scoop out seeds, then cut flesh into thin slices. 2. In a bowl, combine chayotes, red onion and cilantro. 3. Season with lime juice, salt and chile peppers. Sprinkle with olive oil and serve. |
