This is really good as a side dish. Perfect for your vegetarian friends or anyone who loves the creamy, rich Italian classic Polenta. The goat cheese just layers that flavors with a zing! Ingredients:
2 c water |
2 c milk |
1 cup medium polenta |
1 tbsp. chopped lemon zest |
1 tsp kosher salt |
1 pkg. chavrie fresh goat cheese (either pyramid-shaped or the log will work) |
Directions:
1. • In a medium pot with high sides combine the water, milk, and bring to a boil over high heat. 2. • Reduce the heat to low and slowly pour in the polenta while whisking constantly. 3. • Cook the mixture for at least 5 minutes, stirring with a wooden spoon until thickened and cooked. 4. • Stir in the Chavrie®,lemon zest and kosher salt. |
