From a Galveston-area church cookbook, a wonderful and moist cake. Ingredients:
2 cups sugar |
2 cups flour |
1 teaspoon salt |
1 teaspoon baking soda |
4 eggs |
3 teaspoons cinnamon |
1 tablespoon cocoa |
2 teaspoons cocoa |
1 1/2 cups pumpkin puree |
1 1/2 cups oil |
2 teaspoons vanilla |
1 (1 lb) box powdered sugar |
1/2 cup butter or 1/2 cup margarine |
4 ounces cream cheese |
1 tablespoon milk |
1 cup pecans |
Directions:
1. Beat eggs and add sugar. Beat well. 2. Add flour, salt, baking soda, cinnamon, 1 tablespoon cocoa, pumpkin, oil, and 1 teaspoon vanilla. Mix well. 3. Pour into a greased 13x9 pan and bake at 350 degrees for 1 hour. Cool. 4. Mix powdered sugar, 2 teaspoons cocoa, butter, cream cheese, 1 teaspoon vanilla, and milk until smooth and creamy. Add pecans. 5. Frost cooled cake. |
