this is a wondeful side dish - with rice and daal[lentils] I've only eaten it at family gatherings - it seems to be unique to my village... Ingredients:
colocasia 1/2 kilo boiled and peeled and cut uniformly |
tamarind - soaked in water and pulped |
ginger cut in strips - say, an inch of ginger |
green chillies - cut in strips -as many or few as you like |
mustard seeds - 1 tsp |
asafoetida - a pinch |
salt - to taste |
turmeric powder - a tsp |
red chilly powder - 1 tsp |
jaggery - 1 tsp |
curry leaves - about 5 |
Directions:
1. heat a couple of spoons of oil[preferably gingelly oil] in a dish 2. when it gets hot, add the mustard seeds and curry leaves and let them splutter 3. add the ginger and green chillies and let them fry about 1 minute 4. add the colocasia - stir it around 5. add salt, turmeric and red chilly powder 6. once the colocasia is nicely coated,add the tamarind concentrate 7. once the tamarind cooks, add some water and let it all thicken 8. add some jaggery to bring out all the flavours 9. when the consistency is thick, switch it off. 10. enjoy! |
