This is the recipe I converted from the Muhammad Speaks Newspaper recipe because my husband buys bean pies every Saturday. I wanted to bake some for him. Ingredients:
1 lb dried navy beans (cooked in water, makes 6 cups) |
6 eggs |
1 (12 ounce) can evaporated milk |
1 cup butter, melted |
1 tablespoon nutmeg |
1 tablespoon cinnamon |
6 cups sugar |
3/8 cup vanilla |
Directions:
1. Cook beans in water until soft. Drain beans. 2. Preheat oven. to 350 degrees. 3. In food processor, blend beans, melted butter, and milk. 4. Transfer to large mixing bowl. 5. In smaller bowl, whip eggs, nutmeg, cinnamon, and vanilla. 6. Add sugar and egg mixture to bean mix. Mix well. 7. Pour into pie shells. 8. Bake about one hour or until golden brown. 9. Makes about six 9 pies. 10. Tip: 5 minutes after removing pies from oven, cover with plastic wrap that clings. |
