Charred Vegetable Rice

Ingredients:
1 cup(s) long grain white ric
1 1/2 tablespoon(s) olive oil
1/2 cup(s) frozen whole kernel corn thawed
1/2 cup(s) grape tomatoes halved
3/4 teaspoon(s) salt
1/2 cup(s) zucchini chopped
1/3 cup(s) green onions chopped
Directions:
1. Cook 1 c long grain white rice according to pkg directions, omitting salt and fat.
2. Heat 1 1/2 T olive oil in a large cast iron skillet over medium-high heat.
3. Add 1/2 c thawed frozen whole-kernel corn and 1/2 c chopped zucchini to pan; saute 3 minutes or until vegetables are charred.
4. Stir in 1/2 c halved grape tomatoes and 1/3 c chopped green onions; saute 1 minute or until tomatoes almost wilt. Combine vegetable mixture, rice, and 3/4 tsp salt.
