I got this recipe off of a couple of years ago when I was searching for a special sweet potato dish to make to go with our Thanksgiving meal. It was an instant hit, and is now requested at EVERY holiday meal. Read more . This rich, decadent dish can easily take the place of pie. (Who are we kidding? It can be an *extra* dessert for your holiday spread!) Ingredients:
4 cups sweet potatoes, peeled and cubed |
2 cups white sugar |
4 eggs, beaten |
3/4 cup butter, melted |
1 cup evaporated milk |
1 teaspoon ground nutmeg |
1 teaspoon ground cinnamon |
2 cups miniature marshmallows |
1 cup flaked coconut |
topping |
1 1/2 cups crushed cornflakes cereal |
1/2 cup packed brown sugar |
1 cup chopped pecans |
3/4 cup butter, melted |
Directions:
1. Preheat oven to 400. 2. Boil sweet potatoes until tender and mash. 3. Coat a 9x13 inch baking dish with butter. 4. In a large bowl, mix the sweet potatoes together with sugar, eggs, 3/4 cup butter, evaporated milk, nutmeg, cinnamon, marshmallows and coconut. Scoop the mixture into the baking dish. 5. Bake 20 minutes in the preheated oven. 6. While baking, in a small bowl, mix the topping ingredients together. Spread the topping over the baked casserole. 7. Return the casserole to the 400 degree oven and bake an additional 10 minutes. |
