This is my version of a very popular local dish. Even people who don't like fish enjoy this. If your family doesn't like the fishy taste make sure to cut off pieces with a brown tint to them - that is the fat and it does taste fishy. Can substitute any white mild fish, chicken or even Salmon.
Ingredients:
2 lbs halibut fillets
1/2 cup butter, melted
1 yellow onion
1 -8 ounce sour cream (1 c.)
1 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon seasoning salt (johnnys)
1 teaspoon black pepper
1 teaspoon basil
1 teaspoon thyme
1/2 cup parmesan cheese, shredded
1/2 cup plain breadcrumbs
Directions:
1. Preheat oven to 400°F.
2. Cut halibut into entree size portions - approximately 3x4 inches.
3. Chop onions finely and sprinkle in 13x9x2 baking pan and pour melted butter over top.
4. Place halibut filets in single layer over top of onions.
5. Combine sour cream, mayonnaise, garlic powder, salt, pepper, basil and thyme.
6. Cover halibut with sauce and top with bread crumbs.
7. Bake at 400°F for 20 minutes.
8. Remove from oven and top with Parmesan and return to oven for 10 minutes or until golden brown.
9. Fish is done when it flakes easily with a fork. It should be white and moist.
10. Serve hot with rice pilaf and a green vegetable.
11. To half recipe - half all ingredients except butter and onion.
