This is great for Thanksgiving, but it's June and I'm craving them. Ingredients:
4 cups mashed sweet potatoes |
1 cup sugar |
4 eggs beaten |
1 2 cup melted butter |
1 cup evaporated milk |
1 teaspoon grated nurmeg |
1 teaspoon cinnamon |
2 cups mini marshmellows |
1 cup coconut |
topping |
11 2 cup crushed cornflakes |
1 2 cup brown sugar |
1 cup pecan pieces |
1 2 cup melted butter |
Directions:
1. Preheat oven to 400 degrees 2. Grease a 9x13 pan. 3. Stir together sweet potato mixture. 4. Put into pan. 5. Bake for 20 minutes 6. Meanwhile mix together topping ingredients. 7. Put topping on sweet potatoes. 8. Bake 10 more minutes. |
