A moist, kind of dense, sweet and delicious cake that is also easy to prepare. I personally keep this cake in the refrigerator to retain it's freshness. Great in the summertime. I use the cake mix with pudding on the label. Ingredients:
1 (18 ounce) package white cake mix |
3 tablespoons flour |
1 ounce strawberry jell-o gelatin dessert |
3/4 cup vegetable oil |
1/2 cup strawberry juice (see below) |
4 eggs |
2 (8 ounce) packages frozen strawberries, thawed (reserve juice) |
1 (16 ounce) box powdered sugar |
1/2 cup butter, softened |
Directions:
1. Preheat oven 350 degrees F. 2. Blend cake mix, flour, and jello together, then stir in oil, and water. Beat in 1 egg at a time. Mix in 1/2 of the drained strawberries and strawberry juice (if you need to, add water to make 1/2 cup strawberry juice/water). 3. Pour into a prepared 9X14 pan. 4. Bake 30-35 minutes Sometimes, due to humidity it takes a few minutes longer. 5. Frosting:. 6. Cream softened butter with box of sugar, then beat adding the strawberries (drained - use in cake - see above) gradually to get the right consistency. If it is too thin, beat in more powdered sugar as needed. Spread on cooled cake. |
