I was thinking of what to make for dinner tonight, and came up with this great,quick , and easy recipe. The chipotle sauce is so thick and creamy with a nice kick to it. Your friends and family will love this dish. You can add or reduce the amount of Chipotle peppers, depending on your family's taste. I love all my stuff super hot, so the whole can is just right for us. You can also serve these meatballs as appetizer with the chipotle sauce on the side. Ingredients:
2 lbs lean ground chuck |
1 small onion, diced |
3 garlic cloves, diced |
15 leaves chopped cilantro |
1 (8 ounce) can tomato sauce |
3 teaspoons soy sauce |
20 saltine crackers, crumbled into bowl |
2 eggs |
1 1/2 teaspoons salt |
1 teaspoon black pepper |
1 pinch dried oregano |
1 pinch of dried pizza seasoning |
1 (8 ounce) can chipotle peppers |
1 (6 ounce) can tomato paste |
1 (11 ounce) can diced tomatoes, including juice |
1/2 small onion, cut in half |
1 1/2 cups sour cream |
1 cup water |
3 garlic cloves |
1 teaspoon salt |
1 teaspoon pepper |
1/2 cup olive oil |
Directions:
1. In a really large bowl combine all of the meatball Ingredients, mix well with your hands. Heat olive oil in a large frying pan. Make medium size meatballs and add them to the hot pan. You will need to make about 3 batches, the good thing about this is all the good stuff that's left on the pan will make the next batch taste even better. Fry the meatballs until fully cooked insided, you can test one by cutting it in half to make sure it's been cooked all the way through. Place cooked meatballs in a large serving dish and keep frying the rest until all done. In a blender combine all the sauce ingredients. blend til all ingredients come together. heat sauce in a large saucepan and serve over warm meatballs. Serve over white rice. |
