Champinones Al Ajillo-Spanish Garlic Mushrooms |

Received this in email (thanks Phil!) from gourmet-recipes-from-around-the-world. Sounds like a lovely tapas for two. Ingredients:
3 tablespoons extra virgin olive oil |
8 large button mushrooms, wiped clean and quartered |
2 -3 garlic cloves, finely chopped |
1 tablespoon lemon juice |
1/4 teaspoon black pepper, freshly ground |
1/2 teaspoon sea salt |
1/4-1/2 teaspoon chili flakes, dried |
1 teaspoon flat leaf parsley, finely chopped fresh |
Directions:
1. Heat the olive oil in a large frying pan over a medium heat and cook the mushrooms for two minutes, stirring regularly. 2. Add the garlic, lemon juice, sea salt, pepper and chili flakes and cook for a further 4 minutes. 3. Remove from the heat, stir through the parsley and serve on small plates. |
