Champignons Farcis Stuffed Mushrooms |

A nice change from the usual seafood stuffing. These mushrooms disappear quickly so I always double the recipe. Enjoy! This recipe is a from the First Edition set of Woman's Day Encyclopedia of Cookery that was published in 1966. Ingredients:
12 large mushrooms |
6 slices bacon |
1 small onion, finely chopped |
1/4 chopped green pepper |
1 cup soft bread crumbs |
1/2 tsp season salt |
2 tbl parsley |
chicken broth to moisten |
Directions:
1. Cook bacon until crisp and set aside; crumble when cooled 2. Pour off all but about 2 Tbl of drippings and saute onion and pepper until tender 3. Stir in bread crumbs, crumbled bacon, parsley and season salt; add broth to moisten 4. Stuff mushroom caps, place in shallow pan with a small amount of water ( 1/4 inch deep) 5. Bake at 325 for about 25 mins. |
