An herbaceous, light dressing that goes very well with citrusy salads. Prep Time: 10 minutes. Notes: Dressing keeps, chilled and covered, up to 1 week. Ingredients:
1 tablespoon minced shallots (1 large shallot) |
3 tablespoons champagne vinegar |
1 tablespoon dijon mustard |
10 tablespoon extra-virgin olive oil |
1 teaspoon finely chopped fresh tarragon |
1 teaspoon finely chopped flat-leaf parsley |
1 teaspoon kosher salt |
Directions:
1. Whisk together shallots, vinegar, and mustard. Add olive oil, whisking, then whisk in tarragon, parsley, and salt. |
