CHAMPAGNE BRIE SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Newcomb Estate in Amarillo, Texas in 1992. Ingredients:
2 cups dry champagne |
2 cups white wine |
1 tablespoon finely chopped shallots |
2 cubes chicken bouillon |
8 ounces brie with rind left on |
1-1/2 quarts heavy cream |
Directions:
1. Sauté shallots and bouillon in wine. 2. Add remaining wine and champagne then add brie and heavy cream. 3. Bring to a boil for 1 minute then remove from heat and let stand 5 minutes. 4. Strain then season with salt and pepper if desired and serve immediately. |
