Ingredients:
3/4 cup(s) champagne
1-2 bay leaves
3-4 tablespoon(s) butter separated
1/4 cup(s) chopped shallots
1 teaspoon(s) fish sauce
1 teaspoon(s) mirin
7-8 peppercorns
Directions:
1. Put all ingredients in a saucepan and reduce over low heat until there is about 3 tablespoons of liquid. Strain, return to pan it and whisk in 3 tablespoons of butter, one at a time.
