Sometimes called poundies, served in a mound with a well of melted butter and traditionally eaten with a spoon, starting from the outside and dipping each spoonful into the butter Ingredients:
2 lbs boiling potaoes cut into 2 pieces |
1/2 cup milk, light cream or half and half |
6 tbs butter |
1 1/2 c chopped fresh chives or scallions |
salt and freshly ground pepper to taste |
Directions:
1. Cook the potatoes in boiling. salted water 12 - 15 minutes. 2. Darian and mash 3. Meanwhile, in a saucepan, combine milk and 4 Tbl of the butter 4. Heat until butter is melted 5. Add chives or scallions, reduce to simmer and cook 2 - 4 minutes 6. Add the potaoes, salt and pper tho the mil mixture and stir until blended 7. To ser, spoon Champ into a deep bowl, make a well in the center and top with remaining butter 8. Serve at once. |
