3 cups flour |
2 tsp pumpkin pie spice |
2 tsp ground ginger |
1/2 tsp ground allspice |
1/2 tsp ground cardamom |
3 sticks butter |
1 cup sugar |
1/4 tsp salt |
2 large egg yolks (i use egg beaters) |
1 tsp vanilla |
colored sugar and prepared frosting for decorating |
Directions:
1. In a large bowl, whisk together flour and spices. Set aside. 2. Combine butter, sugar and salt in a large bowl, beat until smooth. add egg yolks one at a time and beat until smooth. Add vanilla. 3. Add in flour mixture, 1 cup at a time until flully blended. 4. Divid dough in half, wrap in plastic wrap and refrigerate for at least 1 hour. 5. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. 6. Flour surface. roll out to 1/4 inch thickness and cut out shapes with cookie cutters. 7. sprinkle with decorative sugar if desired. Bake until golden brown about 12 minutes. 8. Cool. 9. These can also be frosted. 10. store in airtight container. 11. Makes 3 dozen. |
