delightful, spiced cookies, great with tea or coffee Ingredients:
1 cup butter, softened |
2 cups powdered sugar, divided |
2 cups all-purpose flour |
2 teaspoons ground cardamom, divided |
1 1/2 teaspoons ground all spice |
1 1/2 teaspoons ground cinnamon, divided |
1 teaspoon ground nutmeg |
1/2 teaspoon ground ginger |
1/2 teaspoon ground cloves |
1/2 teaspoon salt |
4 teaspoons vanilla extract |
2 egg yolks |
Directions:
1. Preheat oven to 350F degrees. 2. In large bowl, beat butter and 1/2 cup powdered sugar with mixer on low speed until blended. 3. Stir in flour, 1 1/2 teaspoons cardamom, all spice, 1 teaspoon cinnamon, nutmeg, ginger, cloves, salt, egg yolks and vanilla. 4. Shape dough by tablespoonfuls into balls. 5. On ungreased baking sheet, place balls 2 inches apart. 6. Bake for 12 to 15 minutes or until lightly browned. 7. Remove from baking sheets to cooling rack and cool for 5 minutes. 8. In another bowl, mix remaining powdered sugar, cardamom and cinnamon. 9. Working in batches, gently roll warm cookies in coating mixture. 10. Cool on racks for another 5 minutes. 11. Then roll again in mixture for one more coating. |
