We camped at Chadron State Park in the Pine Ridge area of North-Western Nebraska several years ago. The park service runs a trail-ride where you ride horses out to a remote location and have a buffalo stew feed. Read more I talked one of the rangers out of their recipe. Ingredients:
about 5 pounds of buffalo stew meat |
10 potatoes, peeled and cubed |
5 carrots, peeled and sliced |
1 bunch of celery, chopped |
2 large onions, coursely chopped |
1 teaspoon garlic salt |
5 tablespoons of beef boullion granules |
8 teaspoons dried basil |
5 teaspoons dried oregano |
2 to 3 tablespoons of salt |
2 to 3 tablespoons of ground black pepper |
4 bay leaves |
1 large can of diced tomatoes |
1 box of quaker barley |
Directions:
1. Boil the potatoes, carrots and celery for 10 minutes in about 2 quarts of water. 2. Add all of the other ingredients and cook in a large roaster for 6 to 8 hours. 3. Add the barley during the last 3 hours of cooking. 4. NOTES-As you can see, it makes A LOT. I think you can substitute beef stew meat, if buffalo meat is unavailable. Check the stew from time to time and add a little water if it seems like it's cooking away too much. |
