A taste of the Islands. This salsa goes really well with grilled chicken or pork. We marinated 1-inch chicken strips in coconut milk, cilantro, fresh lime juice, jalapeno peppers, and then threaded them onto skewers and served with this salsa. Very good! Cook time is chill time. Ingredients:
1/2 cup chopped tomato |
1/2 cup purple onion |
1/2 cup chopped papaya |
1/4 cup chopped yellow bell pepper |
1/4 cup chopped green bell pepper |
1 jalapeno pepper, minced |
1/2 teaspoon chili powder |
1 tablespoon honey |
Directions:
1. Combine all ingredients. 2. Cover and chill 3 to 4 hours. |
