Great on a hot summer day. The citric acid in the juices cooks the scallops perfectly. Ingredients:
1.5 lb bay scallops |
1.0 c orange juice |
0.5 c lime juice |
0.5 c lemon juice |
1.0 tomato, diced small |
0.5 red onion, diced small |
1.0 serrano pepper, diced small |
2.0 cloves garlic, minced |
salt to taste |
Directions:
1. Combine all ingredients. 2. Cover and chill 6 hours or over night. 3. Drain. 4. Serve in parfait glasses as an appetizer or light meal. |
