Cereal Bowl Vegetable Frittta |

Ingredients:
2 teaspoon(s) olive oil |
1/2 cup(s) fresh baby spinach stemmed and chopped |
1 1/5 plum tomato seeded and diced |
2-3 tablespoon(s) shredded cheddar cheese |
salt to taste |
2 eggs |
4 tablespoon(s) water, milk or half and half |
Directions:
1. Rub inside of 6-inch microwave-safe cereal bowl all over with olive oil. Place spinach, tomato and cheese in bowl, season with salt and toss to combine. In a small bowl, use a fork to lightly bet eggs and water together. Pour eggs over tomatoes and cheese. Do not stir. 2. Microwave on high, uncovered for 2 minutes. After signal, let rest for 15 to 20 seconds in oven. Be careful not to overcook. The frittata will be uffed and then will drop as it cools. Serve immeditely. |
