When I buy celery for a recipe, it usually calls for 1-2 stalks, leaving me with almost a whole bunch left to wilt away in my fridge. Enter the celery salad. I can't eat celery alone but jazzed up with a little bit of this and that, I'll go back for more every time. Ingredients:
5-7 stalks of celery chopped into thin slices (i use the mandolin - i also peel first to omit some of the fibers) |
2 tablespoons red wine vinegar |
3 tablespoons olive oil |
2 tablespoons grated parmesan cheese |
1 chopped garlic clove |
salt |
pepper |
Directions:
1. Combine all the ingredients and watch even the biggest celery haters enjoy this fresh and tasty salad. |
