Juicy pears, tangy blue cheese and sweet raisins jazz up this crunchy coleslaw. âThe delicious combination is wonderful served with pork roast or baked ham.â âRoxanne Chan, Albany, California Ingredients:
1 medium celery root, peeled and julienned |
3 cups shredded red cabbage |
3 medium pears, thinly sliced |
1/3 cup golden raisins |
1/4 cup chopped red onion |
1/4 cup minced fresh parsley |
1/4 cup sliced almonds |
3/4 cup sour cream |
1/3 cup mayonnaise |
4-1/2 teaspoons poppy seeds |
4-1/2 teaspoons lemon juice |
4-1/2 teaspoons prepared horseradish |
2 garlic cloves, minced |
1-1/2 teaspoons honey |
3/4 teaspoon grated lemon peel |
3/4 teaspoon pepper |
1/2 cup crumbled blue cheese |
Directions:
1. In a large bowl, combine the first seven ingredients. Combine the sour cream, mayonnaise, poppy seeds, lemon juice, horseradish, garlic, honey, lemon peel and pepper; pour over slaw and toss to coat. Sprinkle with blue cheese. Yield: 16 servings (3/4 cup each). |
