Celery Ginger Summer Salad |

A tangy pang to an old family favorite. Great for those summer days when you just do NOT want to turn on the oven! Ingredients:
5 - 6 celery stalks |
2 carrots |
1/2 cup walnuts |
3/4 cup raisins |
good sized chunk fresh ginger |
1/3 cup light mayo |
1 - 2 tbs lemon juice |
Directions:
1. Chop the celery and carrots into bite-sized pieces 2. Grate the ginger 3. Dump all ingredients into bowl and stir! 4. - 5. If desired, place the salad into the fridge for about an hour to let the flavors meld. 6. For extra umph, try adding grapes cut in half and/or diced apples. |
