I have been trying to think of different things to add to salads. Came up with this.......The different fillings are just suggestions to build upon. Some of them make good sandwich fillings. I am sure that these are not new recipes to anyone, most are combos made before. These are all fillings I have tried myself.
Ingredients:
6 celery ribs, peeled, washed, and dried
3 ounces cream cheese, softened
1 ripe banana, crushed
1/2 cup pecans, chopped
1 cup crushed pineapple, drained
3 ounces cream cheese
1/2 cup ham, chopped finely
2 hard-cooked eggs, minced
1 -2 tablespoon mustard
3 ounces cream cheese, softened
1/2 cup kidney bean, cooked and smashed (canned okay)
1/2 cup cheddar cheese, shredded
1/2 small onion, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1 tablespoon olive oil (optional)
1/2 cup imitation crabmeat, chopped
1/4 cup mushroom, chopped
1/4 cup celery, chopped
1/2 small onion, minced
3 ounces cream cheese, softened
2 tablespoons butter, melted
1 tablespoon lemon rind, zested
1 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika (sweet or smoked)
3 ounces tuna in water, drained
1/4 cup sunflower seeds
1/4 cup cashews, chopped
1/4 cup almonds, sliced
mayonnaise, to moisten
Directions:
1. Hawaiian Filling: Combine and fill celery.
2. Ham Filling: Combine and fill celery.
3. Bean/Cheese Filling: Combine and fill celery.
4. Nutty Tuna Filling: Combine and fill celery.
5. Imitation Crabmeat Filling: Cook celery and onions in butter until tender. Combine with rest of ingredients and fill celery.
6. As you can see from list of ingredients, this recipe is only limited by your imagination but filling must be of a consistency to hold.
7. It is important to peel the celery if you are appealing to young or old eaters as peeling gets rid of the stringy fibers.
8. Make sure that the filling does not bulge out too far or it could fall out when tossing salad.
9. After filling, slice into 3/4 to 1 inch pieces.
10. Now - go to town and enjoy!
