Easy way to get your veggies (celery) and your dairy (cheese). My husband hates celery but he loves this dish! Ingredients:
1 small bunch celery, cubed |
2 tbsp margarine |
3 tbsp flour |
a little salt and pepper, to taste |
1 cup milk |
1 cup grated cheese (cheddar is our favorite for this) |
Directions:
1. 1 small bunch celery, cubed -Cover with salted water and cook covered, until clear and tender. 2. DO NOT COOK TOO LONG because it is going to bake. Drain well, before placing into 1 1/2 quart casserole. 3. Make Sauce -Over low heat melt 2 Tbsp margarine. 4. Add 3 Tbsp flour, salt and pepper, 1 cup milk, 1 cup grated cheese 5. If it gets too thick, you may add a little more milk, a few spoonsful. 6. Cook over low heat, stirring constantly, until thick. Pour over drained celery in casserole dish. 7. Bake 350 for 30 minutes. |
