take a fresh bunch of celery.clean the stalks,cut off the leaves and cut the stalks up into pieces about three inches long.  | 
                                                take about a two quart bowl and fill it 3/4 full of water  | 
                                                add 2 teaspoons of anise oil (or)anise liquid flavoring  | 
                                                place the celery pieces in the anise water,making sure all of the celery pieces are covered by the liquid.  | 
                                                leave the bowl set in your refrigerator for about 4 to 5 hours  | 
                                                the celery will absorb all the anise in this length of time and mix it with its own natural flavors and juices  | 
                                                remove the celery and serve while chilled  | 
                                                note: on first bite you will not know quite to think,because of the different taste,but after several bites,i beleive that you will like it.  |
