Celeriac and Walnut Gratin |

This is a great vegetarian main course and can be made several hours before serving. Ingredients:
1 large celeriac |
1 1/2 tablespoons walnut oil |
300 ml vegetable stock |
1/2 cup chopped walnuts |
100 g blue cheese |
Directions:
1. Heat oven to 190°C. 2. Peel, quarter and thinly slice celeriac - can be done with slicing blade of food processor. 3. Toss celeriac with walnut oil, season to taste. 4. Place in a gratin dish, spread out evenly. 5. Pour over stock, bake for 45 minutes. 6. Scatter with walnuts and crumble over blue cheese. 7. Cook another 15 minutes till crisp and golden. |
