This is another of my mom's recipes. She made it for a lot of gatherings. Remember, it will mellow as the ice melts. This recipe makes 2 gallons (estimated 60 servings,) but can be scaled back. NOTE: Prep time does NOT include chilling time. Ingredients:
3 (46 ounce) cans pineapple juice |
1 pint brandy (16oz) |
1 pint cointreau liqueur (16oz) |
1 cup white corn syrup |
3 (25 ounce) bottles champagne (or thereabouts) |
Directions:
1. Mix pineapple juice, brandy, cointreau and corn syrup. Cover & chill for 24hrs. 2. When ready to serve, put in a large punch bowl with a big chunk of ice and add the champagne. |
