Cedar Planked Salmon With Citrus BBQ Sauce |

As salmon is so readily available (and most of the time I can get it fresh), this is a nice way to treat this lovely fish. The BBQ sauce makes alot, so either cut the recipe in half... use on ribs or chicken...or freeze it!! Ingredients:
1 small red onion, diced |
2 garlic, minced |
2 green onions, chopped |
1 1/2 cups barbecue sauce, preferably homemade |
1/2 cup orange marmalade |
1/4 cup dill, chopped |
2 tablespoons orange juice, prefereably fresh |
1 tablespoon black pepper, coarsely ground |

Directions:
1. Combine the red onion, garlic, green onion, BBQ sauce, marmalade, dill, orange juice and black pepper. This can be prepared ahead of time and set aside. 2. Presoak a cedar plank by putting it in the sink with a heavy object sitting on top of it for 1/2 a day. 3. Preheat the grill. Remove the plank from the water. 4. Sit the plank on the grill until it smokes a bit, then carefully place the salmon on the plank. Cook the salmon until done - usually until when the milky white juices release, about 20 - 30minutes. 5. Discard the plank after using. |
