Cedar Plank Tilapia With Tomato Caper Relish |

From Robin Miller Ingredients:
20 ounces tilapia fillets |
1 tablespoon chili powder |
1 teaspoon cumin |
1 teaspoon garlic |
1 cup tomato, finely diced |
2 tablespoons capers |
2 tablespoons basil, chopped |
Directions:
1. Preheat oven to 375°F Put an 11x17 inch untreated cedar plan in the oven to heat. 2. Sprinkle the seasonings over one side of the fish. Place the fish, spice side up, on the plank. 3. Bake the fish for 15 minutes, or until it pulls apart. 4. To make the relish, in a bowl, combine the tomato, capers and basil. Mix well and season to taste with salt and pepper. |
