Made this one up on the fly, and we all loved it so much that I thought I should write it down. P.S. I found the Raw Sweet Paprika at my local surplus goods store. Now that I have used it a couple of times I really wish that I had bought more. Spend the extra few bucks, it makes all the difference. Ingredients:
2 lbs hamburger |
1/2 onion, diced |
14 ounces diced tomatoes |
1 teaspoon ground cumin |
3/4 teaspoon rubbed sage |
1 1/2 tablespoons raw sweet paprika |
14 ounces black beans |
8 ounces frozen corn |
6 ounces cheddar cheese |
6 buritto size tortillas |
salsa verde |
Directions:
1. Start to brown hamburger over medium high heat. 2. Add the onion when the hamburger is about half done. 3. Once the hamburger is done and the onions are translucent add the tomatoes, cummin, sage, and paprika. 4. Let this simmer for a few minutes, then add the beans and corn and heat through. 5. To serve place about 3/4 c on a tortilla with 1 oz cheese and roll. Serve with salsa verde on top. |
