Ceasar Salmon Salad With Pasta |

Found this online last year when I was looking for something different to serve the girls for lunch. It was a big hit! Ingredients:
1 tablespoon olive oil |
kosher salt |
8 ounces medium pasta shells |
1 head romaine lettuce |
3 ounces smoked salmon, sliced or flaked |
1/2 teaspoon fresh ground black pepper |
1/2 cup creamy caeser salad dressing, (bottled or home-made) |
2 tablespoons capers, drained |
1/2 medium red onion, thinly sliced |
1 med ripe red tomato, thinly sliced |
1 cup parmesan cheese, grated |
1 cup croutons |
Directions:
1. Fill a large pot with water. 2. Add oil and 2 pinches kosher salt. bring to a boil over high heat. 3. Add pasta shells and cook according to package instructions. 4. Drain, rinse with cold water, and refrigerate for 10 minutes. 5. Meanwhile, wash, dry, and tear lettuce into medium size pieces. Combine in a large serving bowl with cooked pasta, smoked salmon, black pepper, salad dressing, capers, tomatoesand onions; mix well. 6. Before serving, top with Parmesan cheese and croutons. |
