We used to eat this at a pizza restaurant in Lakeland, Florida. I loved it as a kid. This recipe is from memory, so might not be exactly the same. Ingredients:
4 cups fresh spinach |
1 cup feta cheese, crumbled |
4 slices crumbled bacon |
1/2 cup thinly sliced onion |
8 cherry tomatoes |
1 cup pumpernickel crouton |
2 chopped hard-boiled eggs |
1/2 cup sliced mushrooms |
1/2 cup olive oil |
3 tablespoons cider vinegar |
1 teaspoon sugar |
salt |
pepper |
Directions:
1. Combine dressing ingredients and toss 1/2 of the mixture with the spinach. 2. Arrange all remaining ingredients on top of dressed spinach. 3. Serve remaining dressing on side. |
