Cauliflower with Tomato & Feta |

Easy and delicious! Ingredients:
2 tablespoons olive oil |
1/4 cup onion, chopped |
1 -2 clove garlic, minced |
1 head cauliflower, chopped |
3 tomatoes, sliced |
1/2 teaspoon dried oregano |
1/2 cup crumbled feta |
salt and pepper |
Directions:
1. Saute onion and garlic in olive oil 2-3 minutes Add cauliflower, tomatoes, oregano, and salt& pepper. 2. Cover and simmer 10 minutes, until cauliflower is tender Transfer to glass baking dish, sprinkle with feta, cover and bake at 350 for 30 to 35 minutes. |
