Unique side dish that is easy to make and always a hit with company. Goes great with fish or grilled tofu. Also a big hit in our house. Alternative: Toss with pasta to be the main dish. Ingredients:

4 tblsps extra-virgin olive oil |
2-10 anchovy fillets (add to taste) |
1 tblsp minced garlic |

Combine oil, anchovies, garlic and crushed red pepper in deep skillet. 3. Turn heat under skillet to medium low. 4. Cook, stirring occasionally, until the anchovies begin to break up and the garlic begins to color, about 5-6 minutes. 5. Add cooked cauliflower to skillet and raise the heat to medium-high. 6. Continue to cook until the cauliflower is coasted with oil and heated through, about 5 minutes. 7. Garnish with fresh parsley and serve. |
