Cauliflower With Curried Tomatoes |

This recipe won the R.O. 20 gift voucher in the Thursday magazine dated January 3rd- 9th'2008. It was submitted by Urmi Chakraborty. Hope you all enjoy it! Ingredients:
1 cauliflower, medium-sized (washed) |
6 tomatoes, finely mashed |
2 teaspoons ginger paste |
1/2 teaspoon cumin seed (jeera) |
1/2 teaspoon cumin powder |
1 pinch turmeric powder |
salt |
3 teaspoons oil |
2 tablespoons coriander leaves, to garnish |
water, 2 glasses of |
Directions:
1. Put the whole cauliflower on medium flame in a pan and pour 2 glasses of water on top of it. 2. Cover the pan and allow to boil for 15 minutes. 3. Uncover the pan. 4. Place the cauliflower on a plate. 5. Heat oil in a pan. 6. Add cumin seeds. Allow to splutter. 7. Once they stop spluttering, add ginger paste and stir-fry for 2-3 minutes. 8. Fold in the mashed tomatoes. 9. Stir-fry for 15 minutes on low flame. 10. Add cumin powder, a pinch of turmeric powder and salt to taste. 11. Cover the pan and cook for 5 minutes. 12. Pour tomato paste(puree) over the cauliflower. 13. Serve garnished with corriander leaves. 14. Enjoy! |
