Cauliflower With Cheese Sauce |

Another great veggie idea from the Marlboro Country Cookbook Morning Fires, Evening Lights (Philip Morris, Inc, 1998). Ingredients:
2 medium heads cauliflower or broccoflower |
1/2 cup butter or margarine |
1/4 cup all-purpose flour |
3 cups half-and-half or milk |
2 cups shredded cheddar or swiss cheese |
4 tbs horseradish mustard |
Directions:
1. Wash and trim cauliflower, do not break apart. In a large cooking pot, cook cauliflower in boiling salted water until tender, about 15 mins. Drain and keep warm. 2. Melt butter in a 2 qt saucepan, stir in flour and cook 2 mins. Add half-and-half; cook and stir until mixture boils and thickens. Remove from heat; add cheese and mustard, stirring until cheese melts. 3. To serve, spoon cheese sauce over cooked cauliflower heads. |
